Hunger and Saturation

Hunger is the visible "drumstick" value in the UI.

Saturation can be understood as a buffer that controls how fast hunger is consumed.

When hunger is consumed, saturation is consumed first, whether from sprinting or natural regeneration at high hunger.

In-game, golden carrots do not add much hunger, but they provide high saturation, so they keep you full longer.

A player's saturation cannot exceed current hunger.

When hunger is already high (especially when the bar starts shaking), foods with higher saturation and lower hunger gain are more efficient. If hunger is low, eating high-saturation food may waste part of the saturation because saturation cannot exceed hunger.
